I want to record audible as well as ultrasonic frequencies, but the wind is overriding audible frequencies. If I used a windshield would this block / reduce the ultrasonic recording capability?

I have successfully used a Røde Dead Kitten windshield over the standard AudioMoth cases and blocked wind from distorting the recordings. I have not tested how it alters the frequency response. The newer ones have had to have thieir elastic band replaced to fit over the case.
I'd guess that it wouldn't have too much affect but you'd have to verify that. A high-pass filter will generally clean up a lot of the wind noise unless it is so loud that it causes the signal to saturate.
